Delicious pork and tofu lettuce wraps with green onions and rice, perfect for a fun family meal where everyone can create their own tasty wraps at the table.
Ingredients:
  • 4 cups water
  • 2 cups uncooked white rice
  • 1 tablespoon vegetable oil
  • 1 pound ground pork
  • 1 bunch green onions, thinly sliced
  • 0.5 teaspoon minced garlic
  • 1 (14 ounce) package firm tofu, drained and cubed
  • 2 carrots, shredded
  • 3 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 0.25 teaspoon hot chile paste
  • 1 head iceberg lettuce leaves, separated
Instructions:
  • Combine water and rice in a saucepan and bring to a boil. Cover, reduce heat to a simmer, and cook for 20 minutes until water is absorbed. Keep warm.
  • In a sizzling wok, sauté pork, green onions, and garlic until lightly browned, for 5 to 7 minutes. Stir in tofu, carrot, Hoisin, and soy sauce until heated through. Finish off the dish by mixing in sesame oil and chile paste. Enjoy!
  • Place a dollop of rice on each lettuce leaf, add the stir-fry mix, and drizzle with more soy sauce or hoisin if desired. Fold the lettuce over to seal everything inside.
