Make delicious pork lettuce wraps for a crowd-pleasing handheld meal.
Ingredients:
  • 350g pork mince
  • 1 stalk lemongrass, trimmed, white part only, finely sliced
  • 1 long red chilli, seeded and finely sliced
  • 125.00 ml chopped mint
  • 2 green onions, thinly sliced
  • 50g (1/3 cup) chopped peanuts
  • 24.40 gm fish sauce
  • 10.60 gm lime juice
  • 1 baby cos, whole lettuce leaves, washed, dried
Instructions:
  • In a sizzling wok or large non-stick pan, swirl a touch of oil. Sear the pork for 3-4 minutes until golden. Toss in the lemongrass and stir-fry for an additional 2 minutes.
  • Combine the chili, mint, green onions, and peanuts in the pan and cook while stirring for 3-4 minutes.
  • Combine umami-rich fish sauce, sweet brown sugar, and tangy lime juice in a small bowl; stir until the sugar completely dissolves.
  • Add the fish sauce mixture to the wok or saucepan, cook for 2-3 minutes, then set aside to cool briefly.
  • On a serving platter, artfully lay out fresh lettuce leaves. Fill each leaf with the savory pork mixture and serve promptly.
