Try this delicious and speedy pork and noodle stir-fry for a new family favorite!
Ingredients:
  • 200g rice noodles
  • 18.20 gm peanut oil
  • 500g Pork Mince
  • 20.00 ml grated fresh ginger
  • 2 garlic cloves, crushed
  • 40.00 ml kecap manis
  • 60ml lime juice
  • 21.00 gm soy sauce
  • 1 red onion, cut into thin wedges
  • 125.00 ml mint leaves
  • 125.00 ml coriander leaves
  • 40.00 ml crushed peanuts
  • Sweet chilli sauce, to serve
Instructions:
  • Place the noodles in a spacious heatproof bowl and cover them with boiling water. Let them sit for 2 minutes, then drain them.
  • Heat oil in a wok or large frying pan over high heat. Add the mince and cook for 6 minutes until golden brown, stirring to break up any lumps. Stir in ginger and garlic for 1 minute until fragrant. Add kecap manis, lime juice, and soy sauce, then stir to combine.
  • Cook noodles for 1 minute or until heated through, then stir in onion, mint, and coriander. Serve stir-fry topped with peanuts and a drizzle of sweet chili sauce.
