Whip up quick and delicious Asian lettuce wraps in just 30 minutes!
Ingredients:
  • 1/3 cup orange marmalade
  • 1 tablespoon fresh lime juice
  • 1 tablespoon soy sauce
  • 1/2 teaspoon grated gingerroot
  • 1/3 cup Thai peanut sauce
  • 2 cups small bite-size strips cooked chicken breast
  • 12 leaves Boston lettuce (about 1 1/2 heads)
  • 1 cup diced fresh mango (about 1 mango)
  • 1 medium red bell pepper, cut into bite-size strips (about 1 cup)
  • 1 cup diagonally sliced fresh snow pea pods (strings removed)
Instructions:
  • Combine marmalade, lime juice, soy sauce, and gingerroot in a small bowl; set aside.
  • Combine the peanut sauce with 1 tablespoon of the marmalade mixture in a medium bowl. Mix well and add the chicken, stirring until it is evenly coated.
  • Place a generous spoonful of the flavorful chicken mixture in the center of each crisp lettuce leaf, then beautifully assemble them on a large serving platter. Garnish with sweet mango, crunchy bell pepper, crisp pea pods, roasted peanuts, and a drizzle of tangy marmalade. To enjoy, simply wrap the lettuce around the delicious chicken mixture and assorted toppings.
