Tortilla cones with chicken

Savory chicken-filled Tortilla cones - perfect for a quick and tasty meal, with a special FODMAP diet option included.
Ingredients:
  • 1 pkt fresh flour tortilla wraps, halved (see notes for Low FODMAP substitution)
  • 1000.00 ml chopped cooked chicken
  • 2 sticks celery, finely chopped
  • 40.00 ml finely chopped chives
  • 100g mayonnaise
  • 60.00 ml finely chopped red capsicum
  • Salt and pepper
  • 500.00 ml shredded lettuce
Instructions:
  • Preheat oven to 180°C. Roll tortillas into cones, secure with toothpicks, and place upright on a baking tray. Bake for 7-10 minutes until golden and crisp. Remove toothpicks before serving.
  • Combine chicken, celery, chives, mayonnaise and capsicum in a bowl. Mix thoroughly, season to taste. Fill lettuce cones with chicken mixture. Serve promptly.
