Slow-Cooker Green Chile Pulled Pork Burritos

Make delicious green chile burritos using a slow cooker for an easy Mexican dinner. Enjoy spicy pork filling in Old El Paso™ tortillas with minimal effort. Your slow cooker will do most of the work for these flavorful pulled pork burritos!
Ingredients:
  • 1 to 2 tablespoons chipotle chile pepper powder
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1 boneless pork loin roast (2 1/2 lb), trimmed of fat
  • 1 poblano chile, seeded and chopped
  • 2 cups green chile salsa (from 16 oz jar)
  • 12 tortillas from 2 packages (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count), heat as directed on package
  • 1 cup guacamole
  • 1 cup sour cream
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. In a small bowl, combine chile pepper powder, oil, and salt. Use this mixture to rub over the pork before placing it in the slow cooker. Sprinkle with poblano chile and then pour salsa over the top.
  • Cover and simmer over low heat for 8 to 10 hours, allowing the flavors to develop perfectly.
  • Transfer the tender pork to a cutting board. Use two forks to shred the pork. Place the flavorful shreds back into the slow cooker and mix thoroughly.
  • Spoon 1/2 cup pork mixture onto each warm tortilla using a slotted spoon. Top each with 1 tablespoon guacamole and sour cream. Fold tortilla: fold 1 side up 1 inch over filling, then fold right and left sides over folded end, overlapping, and fold remaining end down.
