Slow-Cooker Green Chile Chicken Breasts

Tender chicken in creamy green chile sauce, made effortlessly in a slow cooker.
Ingredients:
  • 6 boneless skinless chicken breasts
  • 1 packet (.85 oz) Old El Paso™ Chicken Taco Seasoning Mix
  • 1/2 cup Progresso™ chicken broth (from 32-oz carton)
  • 2 tablespoons lemon juice
  • 2 cans (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 serrano chile, seeded, finely chopped (about 1 1/2 tablespoons)
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1 package (8 oz) cream cheese, cubed, softened
Instructions:
  • Prepare the slow cooker by spraying with cooking spray. Coat both sides of the chicken breasts with taco seasoning mix. Place the seasoned chicken in the slow cooker. Pour broth and lemon juice around the chicken. Add green chiles and serrano chile on top.
  • Cover and cook on High heat setting for 2 to 2 1/2 hours, or until the chicken juices run clear when the thickest part is cut (minimum 165°F).
  • Place the chicken on a serving platter, cover it, and keep it warm.
  • In a small bowl, whisk together cornstarch and water. Pour this mixture into the cooking liquid in the slow cooker. Add cream cheese and stir until melted. Cover and cook for about 15 minutes until the sauce thickens. Serve the chicken with the sauce and cooked white rice, if desired.
