Zesty shredded chicken with green chiles, lime juice, and cumin made effortlessly in a slow cooker.
Ingredients:
  • 2.5 pounds skinless, boneless chicken breast halves
  • 2.5 pounds skinless, boneless chicken thighs
  • 2 (7 ounce) cans diced green chile peppers, divided
  • 1 large onion, diced
  • 1 whole head garlic, peeled and chopped
  • 3 tablespoons ground cumin
  • 2 large limes, juiced, divided
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
Instructions:
  • Drizzle oil in the slow cooker, then layer in chicken breasts and thighs, chile peppers, onion, garlic, cumin, remaining lime juice, salt, and pepper.
  • Slow-cook until the chicken is tender and easily shreddable, for around 8 hours.
  • Shred the chicken using 2 forks.
  • Add the chicken back to the slow cooker along with the remaining chile peppers and fresh lime juice. Stir well to combine all the flavors. Taste the dish and adjust the seasoning with salt and pepper to your liking.
