Flavorful slow cooker shredded chicken with a spicy seasoning blend, perfect for fajitas, tacos, or as a standalone dish!
Ingredients:
  • 1 tablespoon olive oil
  • 2 tablespoons chili powder
  • 2 teaspoons ground paprika
  • 1.5 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 4 (5 ounce) boneless, skinless chicken thighs
  • 3 cups chicken stock
  • 1 chipotle pepper in adobo sauce, or more to taste
  • 0.25 cup tomato paste, or to taste
Instructions:
  • Drizzle the bottom of a slow cooker with olive oil.
  • Combine chili powder, paprika, cumin, garlic powder, onion powder, salt, and pepper in a small bowl, creating a flavorful spice blend.
  • Massage the chicken thighs with the flavorful spice rub, then nestle them into the slow cooker. Pour in the chicken broth, sprinkle the rest of the spices and add the chipotle pepper, give it a good mix. Finally, stir in the tomato paste until well combined.
  • Cook the chicken on Low for 7 to 8 hours or on High for 4 to 5 hours until it is no longer pink in the centers and the juices run clear. Ensure the internal temperature of the thigh reaches at least 165 degrees F (74 degrees C) with an instant-read thermometer.
  • Shred the cooked chicken with forks and return it to the sauce, ensuring it is evenly coated before serving.
