Spicy shredded chicken simmered in a slow cooker, perfect for a party with a Mexican twist.
Ingredients:
  • 1 (8 ounce) can tomato sauce
  • 1 cup chunky salsa
  • 1 clove garlic, minced
  • 1 tablespoon chili powder
  • 1 tablespoon hot pepper sauce
  • 1 tablespoon lime juice
  • 1 teaspoon cayenne pepper
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon ground cinnamon
  • 2 bay leaves
  • 4 pounds frozen chicken breasts
Instructions:
  • In a slow cooker, mix together tomato sauce, salsa, garlic, salt, chili powder, hot sauce, lime juice, cayenne, oregano, coriander, cinnamon, and bay leaves; stir well.
  • Place the chicken breasts in the sauce, making sure each side is well coated.
  • Cook the chicken on High heat until it is tender and fully cooked through, which should take approximately 5 hours.
  • Shred the chicken using 2 forks, and place it back in the slow cooker. Cook on Low or Warm for an additional 2 hours.
  • Before serving, strain off any excess liquid to enhance the presentation. Serve piping hot.
