Spicy pork taco filling with green chiles and salsa.
Ingredients:
  • 1 tablespoon olive or vegetable oil
  • 3- to 4-lb boneless pork sirloin roast, netting or string removed
  • 1/4 cup water
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, undrained
  • 2 cups shredded Mexican cheese blend (8 oz)
  • 1 cup thick & chunky salsa
  • 1 large tomato, chopped (1 cup)
  • 1 cup fresh cilantro leaves
  • 1 lime, cut into 16 pieces
  • 16 flour tortillas (6 inch)
Instructions:
  • In a large skillet, heat oil over medium-high heat. Add pork roast pieces and cook for 6 to 8 minutes, turning occasionally, until well browned on all sides.
  • Place the pork in a 3 1/2- to 4-quart slow cooker. Deglaze the skillet with water over medium heat for 2 to 3 minutes, scraping up browned bits. Pour this flavorful mixture over the pork. Sprinkle taco seasoning mix and chiles on top of the pork.
  • Simmer on Low heat for 7 to 8 hours, covered.
  • Transfer the cooked pork onto a cutting board. Shred the pork into bite-size chunks using two forks. Place the shredded pork back into the flavorful juices in the cooker.
  • Serve the cheese and salsa in separate bowls. Arrange the cheese, salsa, tomato, cilantro, and lime on a serving platter. Warm tortillas according to package instructions. Spoon pork onto tortillas using a slotted spoon, then top with cheese, tomato, cilantro, and salsa. Squeeze lime juice over the fillings and fold the tortillas in half.
