Delicious Asian-inspired healthy pork and noodle dish.
Ingredients:
  • 4 pork loin cutlets
  • 20.00 ml grated fresh ginger
  • 21.00 gm soy sauce
  • 20.00 ml chopped coriander
  • 450g shelf life hokkien noodles
  • 18.20 gm peanut oil
  • 1 red onion, thin wedges
  • 1 red capsicum, sliced
  • 120g snow peas, halved diagonally
  • 110ml soy and chilli dressing
  • 100g pkt baby Asian greens
Instructions:
  • In a shallow ceramic dish, place the pork. Mix together the ginger, soy sauce, and coriander. Pour the mixture over the pork and ensure it is well coated. Refrigerate for 1-2 hours to marinate.
  • Boil the noodles until tender, drain. Preheat a grill over high heat, then reduce to medium. Grease the cutlets and grill for 3 minutes on each side until fully cooked.
  • Heat a wok over high heat, then add oil and swirl to coat. Stir-fry onion and capsicum for 2 minutes, then add snow peas and stir-fry for 1 minute.
  • Toss the noodles and dressing together. Mix in the Asian greens and top with the pork when serving.
