Flaky biscuit filled with tangy plum jam, a beloved Croatian delicacy.
Ingredients:
  • 3 egg yolks
  • 225.00 gm white sugar
  • 250g unsalted butter, softened
  • 40.00 ml dark rum (optional)
  • 1.45 gm vanilla essence
  • 1 lemon, zested
  • 235.00 gm sour cream
  • 4.00 gm baking powder
  • 500g all-purpose flour, plus extra for dusting
  • Podravka plum jam (sour plum jam, see note)
  • Icing sugar, to serve
Instructions:
  • Prepare a large baking tray by lining it with baking paper.
  • Using a hand mixer, blend the egg yolks and sugar in a bowl.
  • Combine butter, rum (if using), vanilla essence, lemon zest, sour cream, and baking powder until thoroughly mixed.
  • Gradually incorporate the flour, 1 cup at a time, until a sticky and light-colored dough ball forms (you may not use all 500g).
  • Chill dough wrapped in cling film for 30 minutes. Then, take it out, and preheat the oven to 180C.
  • Divide the dough into 3 equal portions on a floured work surface, then roll each portion into a circle the size of a dinner plate. Use a pizza cutter to slice each circle into 8-10 equal triangle-shaped portions.
  • Spread a generous amount of jam at the wide end of the triangle, fold in the sides, and roll towards the point, creating a croissant-like shape.
  • Transfer to a baking tray and bake for 15-20 minutes until golden brown. Serve dusted with icing sugar.
