Butter Tart Squares

Delicious two-layered butter squares: a flaky buttery cookie base topped with a sweet sugary raisin layer. Makes twelve squares.
Ingredients:
  • 0.5 cup butter
  • 2 tablespoons confectioners' sugar
  • 1.25 cups all-purpose flour
  • 1.5 cups packed brown sugar
  • 0.25 cup butter, melted
  • 2 eggs, beaten
  • 1 tablespoon distilled white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup raisins
Instructions:
  • Preheat your oven to 350°F (175°C) to ensure the perfect temperature for baking.
  • Cream together 1/2 cup of butter or margarine and confectioners' sugar in a small mixer bowl. Blend in flour and press the mixture into a 9x9 inch square pan. Bake in a preheated oven for 5 minutes.
  • Prepare the filling by mixing together brown sugar, melted butter or margarine, beaten eggs, vinegar, vanilla, and raisins. Pour this mixture over the base and bake in a preheated oven for 35 to 40 minutes, or until it sets.
