Maple raisin walnut muffins: Sweet raisin filling and crunchy walnuts baked into each bite, topped with a maple syrup drizzle for a decadent treat.
Ingredients:
  • 1.5 cups raisins
  • 0.75 cup white sugar
  • 0.5 cup butter, cubed
  • 0.5 cup milk
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 0.5 cup chopped walnuts
  • 0.25 cup real maple syrup
Instructions:
  • In a large heavy-bottomed saucepan, combine raisins, sugar, butter, eggs, milk, and vanilla. Cook over medium heat, stirring often until the mixture is hot, slightly thickened, and just starting to bubble (about 4 to 5 minutes). Allow it to cool slightly, uncovered, in the refrigerator while proceeding with the recipe.
  • Preheat your oven to 375 degrees F (190 degrees C), then generously grease 12 muffin cups or coat them with cooking spray.
  • In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt. Create a well in the center and pour in the warm raisin mixture. Gently mix until just combined, then fold in the nuts until evenly distributed. Spoon the batter into muffin cups.
  • Bake at 375 degrees F (190 degrees C) in the center of the oven until golden and a cake tester inserted into the center of a muffin comes out clean, around 15 to 17 minutes. Drizzle about 1 teaspoon of syrup over each muffin right after taking them out of the oven. Let the muffins cool in the cups for 10 minutes, then transfer to a cooling rack. Enjoy warm.
