Upgrade butter tart with graham cracker crust, customize with raisins and nuts.
Ingredients:
  • 2.5 cups graham cracker crumbs
  • 0.25 cup white sugar
  • 11 tablespoons unsalted butter, melted
  • 1 cup light brown sugar
  • 0.33333334326744 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 cup half-and-half
  • 0.5 cup raisins, or as needed
  • 0.5 cup chopped pecans, or as needed
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C), and give 12 muffin cups a quick spritz with cooking spray.
  • Combine graham cracker crumbs and white sugar in a bowl, then mix in melted butter until well coated. Press mixture evenly into bottom and partially up sides of muffin cups.
  • Place shells in the preheated oven for 5 minutes until lightly golden. Remove and maintain oven temperature at 375°F (190°C).
  • In a bowl, cream together brown sugar and softened butter until smooth and creamy, approximately 2 minutes. Gradually add eggs one at a time, making sure each is fully incorporated before adding the next. Mix in vanilla extract, then gently fold in half-and-half.
  • Spoon a generous amount of raisins and pecans into each shell, then carefully pour about 1/4 cup of the sugar mixture into each shell.
  • Bake tarts in the oven until bubbly, typically 15 minutes. Then, let them cool completely on a wire rack, about 15 minutes.
