Spiced oat and raisin slice

Elevate the classic bake-sale treat with a unique twist!
Ingredients:
  • 312.50 ml plain flour
  • 3.75 gm mixed spice
  • 82.50 ml raisins, chopped
  • 90.00 gm firmly packed brown sugar
  • 150.00 gm rolled oats
  • 125g margarine spread
  • 57.20 gm honey
  • 1.25 gm bicarbonate of soda
  • 40.00 gm boiling water
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease and line a 16cm x 26cm slice pan with baking paper, leaving a 2cm overhang on the long ends.
  • Sift flour and mixed spice into a large bowl, then mix in raisins, sugar, and oats before creating a well in the center.
  • In a saucepan over low heat, gently melt the spread and honey for 6 to 8 minutes, stirring occasionally. In a separate jug, mix the bicarbonate of soda with boiling water. Take the butter mixture off the heat, then stir in the bicarbonate of soda mixture. Combine with the flour mixture and transfer to the prepared pan.
  • Press the mixture into the pan and bake for 25 minutes or until golden. Allow it to cool completely in the pan before cutting it into pieces and serving.
