Cranberry Jam Bars

Festive bar cookies with spiced oat-nut dough and homemade cranberry filling.
Ingredients:
  • 1 (12 ounce) package fresh or frozen cranberries (not thawed if frozen)
  • 0.66666668653488 cup white sugar
  • 0.5 cup water
  • 1.5 cups all-purpose flour
  • 1 cup rolled oats (not quick-cooking)
  • 0.66666668653488 cup chopped pecans or walnuts
  • 0.75 cup packed light brown sugar
  • 0.75 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 cup unsalted butter at room temperature - cut into 1-tablespoon chunks
Instructions:
  • In a saucepan over medium heat, combine cranberries, sugar, and water. Bring to a boil, stirring frequently. Reduce heat to a simmer and continue to stir and mash cranberries until mixture thickens, about 15 minutes. Allow to cool completely for about 30 minutes.
  • Preheat the oven to 350 degrees F. Prepare an 8-inch square baking pan by lining the bottom and sides with foil and spraying with cooking spray.
  • In a food processor, blend flour, rolled oats, pecans, brown sugar, baking powder, salt, cinnamon, and nutmeg three times to combine. Add butter and pulse until mixture starts to clump. Firmly press half of the dough evenly into the bottom of the pan. Spread jam over the dough, then top with the remaining dough and gently press into an even layer.
  • Bake for 45 to 50 minutes until beautifully golden. Allow to cool completely in the pan on a rack, then lift the foil to easily remove the pastry and cut it into bars.
