Cranberry & chilli jam

Ingredients:
  • 2 red onions
  • 4 cloves of garlic
  • 3-4 long fresh red chillies
  • olive oil
  • 500 g fresh cranberries
  • 150 g sugar
  • 40 ml red wine vinegar
Instructions:
  • Peel and finely slice the onions, chop the garlic, and deseed and slice the chillies. Cook them in a large pan with oil over low heat until soft. Add cranberries, sugar, vinegar, and water. Simmer for 15-20 minutes until berries are soft. Mash slightly and cook for 15 more minutes until jammy. Season with salt, pepper, and oil. Allow to cool, then transfer to jars and enjoy once cooled. Keeps for 1 week.
