Elevate your summer barbecue with gourmet rosemary, cranberry, and chilli marinated lamb cutlets.
Ingredients:
  • 125ml (1/2 cup) extra virgin olive oil
  • 110g (1/3 cup) jellied cranberry sauce
  • 125.00 ml fresh rosemary, finely chopped
  • 6 garlic cloves, crushed
  • 4 small fresh red chillies, halved, deseeded, finely chopped
  • 18 trimmed lamb cutlets
  • Olive oil, for greasing
  • Salt & cracked black pepper
Instructions:
  • In a large shallow ceramic dish, mix together oil, cranberry sauce, rosemary, garlic, and chili. Add the lamb cutlets and coat them well in the marinade. Cover with plastic wrap and refrigerate for at least 2 hours or overnight to marinate.
  • Grease and preheat barbecue plate with oil on medium-high heat.
  • Grill cutlets on a hot barbecue, brushing with marinade occasionally, for 4 minutes per side for medium or to desired doneness. Plate and serve promptly.
