Cranberry Jalapeño Meatballs

Spicy cranberry chili meatballs - irresistibly sweet & spicy.
Ingredients:
  • 0.5 pound lean ground beef
  • 0.5 pound ground pork
  • 0.33 cup plain dry bread crumbs
  • 2 tablespoons minced jalapeno pepper, or to taste
  • 1 tablespoon tomato-based chili sauce (such as Heinz®)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 cup tomato-based chili sauce (such as Heinz®)
  • 0.5 cup jellied cranberry sauce
  • 2 tablespoons jalapeno pepper jelly
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon brown sugar
  • 0.5 teaspoon garlic salt
  • 1 tablespoon chopped parsley, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with aluminum foil. Place a baking rack on top of the foil and spray the rack with cooking spray.
  • In a medium bowl, mix together ground beef, ground pork, breadcrumbs, jalapeño pepper, chili sauce, Worcestershire sauce, soy sauce, garlic powder, and salt. Use a cookie scoop to shape the mixture into meatballs and place them on a baking rack.
  • Bake until the thermometer reads at least 160°F (71°C, 16-18 minutes).
  • In a large skillet over low heat, combine chili sauce, cranberry sauce, jalapeño jelly, lemon juice, brown sugar, and garlic salt. Whisk until melted and the sauce thickens slightly. If needed, thin out the sauce with a little water.
  • Simmer the meatballs in the skillet until they are beautifully glazed, about 10 minutes. Serve warm, optionally garnished with chopped parsley.
