Ingredients:
  • 2.5kg butcher beef rib roast
  • 96.53 gm cranberry sauce
  • 90.75 gm sweet chilli sauce
  • 510.00 gm beef stock
Instructions:
  • Ignite all the burners on a covered barbecue and set to high heat with the lid down. Place the roast in a greased baking dish. Mix cranberry sauce and sweet chili sauce in a small bowl. Glaze the meat generously with the mixture, ensuring even coverage.
  • Preheat the barbecue and place the roast in the center. Cook with the lid closed for 1 1/2 hours over indirect heat. Take the roast off the grill, transfer to a large plate or board, lightly cover with foil, and let it rest for around 20 minutes before serving.
  • In a large pan over medium heat, pour in the remaining sauce mixture and stock. Bring to a boil, stirring to release all the delicious meat juices stuck to the bottom. Simmer for 5 minutes or until slightly reduced. Serve the sliced meat with gravy on the side.
