Glazed Spiced Pumpkin Bars

Spicy pumpkin dessert bars with Fiber One® bran cereal for a delicious combination.
Ingredients:
  • 1/2 cup orange juice
  • 2 cups Fiber One™ original bran cereal
  • 1/2 cup canola or vegetable oil
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 2 eggs
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1 cup chopped walnuts
  • 1 cup powdered sugar
  • 4 to 6 teaspoons orange juice
Instructions:
  • Preheat oven to 350°F. Grease a 15x10x1-inch pan with cooking spray or grease and flour it. Place cereal in a resealable plastic bag, seal, and crush it with a rolling pin, meat mallet, or in a food processor.
  • In a large bowl, mix together oil, 1/2 cup orange juice, pumpkin, and eggs with an electric mixer on low speed until well combined. Gently fold in crushed cereal and allow it to sit for 10 minutes.
  • Mix all bar ingredients, excluding walnuts, on low speed until fully combined. Gently fold in the walnuts. Evenly spread the mixture in the pan.
  • Bake for 35 to 40 minutes until the top springs back when touched lightly in the center. Allow to cool completely for about 1 hour.
  • Combine powdered sugar and the perfect amount of 4 to 6 teaspoons of orange juice in a small bowl until you achieve the desired drizzling consistency. Drizzle the mixture over the bars, and cut them into 8 rows by 4 rows.
