Spicy chocolate cookies approved for their deliciousness!
Ingredients:
  • 95g (1/2 cup) raisins
  • 115g butter, at room temperature
  • 100g (1/2 cup) caster sugar
  • 100g (1/2 cup, firmly packed) brown sugar
  • 2.20 gm vanilla essence
  • 1.25 gm ground cinnamon
  • 115g (3/4 cup) plain flour
  • 1.25 gm bicarbonate of soda
  • 1.00 gm baking powder
  • 75g (3/4 cup) rolled oats
  • 100g dark choc bits
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays with non-stick baking paper.
  • In a saucepan, cover the raisins with cold water and gently heat over low heat, stirring occasionally, for 2-3 minutes until just heated through. Allow to cool for 5 minutes, then drain.
  • In a bowl, use an electric beater to cream together the butter and sugars until light and fluffy. Mix in the egg, vanilla, and cinnamon. Gently fold in the flour, bicarbonate of soda, and baking powder until just combined. Finally, add the raisins, oats, and chocolate chips and mix until incorporated.
  • Drop 1 tablespoon of the mixture onto the lined trays, leaving space for spreading. Bake in the oven for 12-15 minutes or until golden brown. Cool on a wire rack.
