Ingredients:
  • 1 free-range egg
  • 62.50 ml macadamia nut oil
  • 42.40 gm apple sauce
  • 90.00 gm brown sugar
  • 4.40 gm vanilla extract
  • 250.00 ml plain flour
  • 4.00 gm baking powder
  • 100.00 gm rolled oats
  • 100g good-quality dark chocolate, chopped
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays by lining them with baking paper.
  • Combine egg, oil, apple sauce, sugar, and vanilla in a bowl. Whisk together using a fork until well mixed. Sift flour and baking powder over the mixture. Add oats and chocolate, then gently stir until fully combined.
  • Spoon mixture onto baking trays with space for spreading. Bake until light golden, 15 to 20 minutes. Let cookies cool on trays for 5 minutes before transferring to wire rack. Serve.
