Indulge in these delectable gluten-free chocolate chip oatmeal muffins anytime of the day!
Ingredients:
  • 0.75 cup packed brown sugar
  • 0.25 cup butter, softened
  • 1 egg
  • 1 cup gluten-free all-purpose baking flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 1 pinch ground allspice
  • 1 cup applesauce
  • 1 cup rolled oats, or more to taste
  • 1 cup semisweet chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with either greased cups or paper liners.
  • Cream butter and brown sugar in a bowl. Then, add egg and continue beating until creamy.
  • In a separate bowl, combine flour, cinnamon, baking powder, baking soda, salt, and allspice. Add half of the flour mixture to the butter mixture, then mix. Fold in the applesauce, then add the remaining half of the flour mixture until just combined. Gently mix in oats and chocolate chips. Divide the batter into muffin cups.
  • Bake in the oven until golden and the tops spring back when lightly pressed, for approximately 25 minutes.
