Yummy gluten-free cookies with crunchy cornflakes and chocolate chips, perfect for satisfying after-school cravings.
Ingredients:
  • 115g unsalted butter, softened
  • 150g (2/3 cup) firmly packed brown sugar
  • 8.80 gm vanilla extract
  • 150g (1 cup) gluten-free plain flour
  • 4.00 gm gluten-free baking powder
  • Pinch of salt
  • 120g (2 cups) gluten-free corn flakes, lightly crushed
  • 75g (1/2 cup) gluten-free dark choc chips
  • 50g (1/2 cup) pecan nuts, roughly chopped
Instructions:
  • Preheat your oven to 180C (160C fan forced) and prepare a large baking tray by lining it with baking paper.
  • Mix the creamy butter and sugar until light and fluffy. Incorporate the egg and vanilla until smooth. Combine the flour, baking powder, and salt; then fold them in. Stir in the cornflakes, chocolate chips, and pecans until mixed well.
  • Roll tablespoons of the mixture into balls and place them on baking trays. Flatten the balls with a flour-dipped fork. Bake in a preheated oven for 12-15 minutes or until pale golden.
  • Transfer the baked goods from the oven to cool on the trays for 5 minutes, then move them to a wire rack to cool fully.
