White chocolate and coconut mousse

Indulgent and irresistible fluffy mousse.
Ingredients:
  • 180g white chocolate, chopped
  • 252.50 gm thickened cream
  • 1 tsp coconut essence
  • 3 eggs, separated
  • Fresh raspberries, to serve
Instructions:
  • In a microwave-safe bowl, combine chocolate and cream. Microwave on high for 1 to 2 minutes, stirring halfway through until smooth. Add coconut essence and let it cool for 5 minutes.
  • Combine egg yolks gently until fully incorporated. Whip egg whites with an electric mixer until stiff peaks form, then gently fold in 2 batches into the chocolate mixture.
  • Divide the mixture evenly among six glasses. Cover and refrigerate for 3 hours, or until set. Top with fresh raspberries before serving.
