Elevate your classic white chocolate-macadamia nut cookies with oatmeal and coconut for a chewy center and crisp edges - ideal for the holiday season.
Ingredients:
  • 1.25 cups oatmeal
  • 0.5 cup sweetened flaked coconut
  • 1 cup flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup butter, softened
  • 0.5 cup light brown sugar
  • 1 egg, at room temperature
  • 0.5 teaspoon vanilla extract
  • 0.5 cup white chocolate chips
  • 3 ounces macadamia nuts, coarsely chopped
Instructions:
  • Heat up the oven to 375 degrees F (190 degrees C) and prepare a baking sheet with parchment paper.
  • Blend the oatmeal into a fine powder in a blender, then transfer it to a large bowl.
  • Blend the coconut until finely chopped, then combine it with the oatmeal. Add the flour, baking powder, baking soda, and salt to the mixture, mix well, and set it aside.
  • In a bowl, blend butter, brown sugar, and white sugar until creamy. Mix in egg and vanilla extract. Combine butter mixture with flour mixture and mix thoroughly. Fold in white chocolate chips and macadamia nuts.
  • Scoop generous tablespoons of dough, roll into balls, and place on the baking sheet.
  • Bake until edges are lightly browned, 12 to 14 minutes in the preheated oven.
