Delicious white chococonut cupcakes with a sweet blend of white chocolate and coconut flakes - perfect for any party!
Ingredients:
  • 1 teaspoon butter, or as needed
  • 2 cups baking mix
  • 1 cup milk
  • 0.33333334326744 cup white sugar
  • 1 egg, beaten
  • 2 tablespoons vegetable oil
  • 1 cup sweetened flaked coconut
  • 0.75 cup white chocolate chips, divided
Instructions:
  • Preheat the oven to 400°F (200°C) and generously butter a muffin tin.
  • In a bowl, blend baking mix, milk, sugar, egg, and vegetable oil until well combined. Gently stir in 3/4 cup coconut flakes and 1/4 cup chocolate chips. Pour the batter into the prepared tin and sprinkle the remaining coconut flakes on top.
  • Bake cupcakes until a toothpick inserted in the center comes out clean, for 15-18 minutes. Allow to cool for about 10 minutes before serving.
  • Melt the remaining 1/2 cup chocolate chips in a microwave-safe bowl in 15-second intervals, stirring after each interval, for about 1 minute. Drizzle the melted chocolate over the cooled cupcakes.
