Butterscotch white chocolate chip cookies with a boozy spiced rum kick for a guaranteed crowd pleaser.
Ingredients:
  • 2.25 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup butter-flavored shortening
  • 0.75 cup packed light brown sugar
  • 2 tablespoons spiced rum
  • 0.5 (12 ounce) package white chocolate chips
  • 0.5 (12 ounce) package butterscotch chips
Instructions:
  • Combine and gently mix flour, baking soda, and salt in a small bowl.
  • In a separate bowl, cream together shortening, white sugar, brown sugar, rum, and vanilla extract. Add eggs one at a time, mixing well after each addition. Stir in white chocolate and butterscotch chips. Gently fold in the flour mixture until just combined. Chill the dough for about 30 minutes to slightly firm up.
  • Heat your oven to a toasty 375 degrees F (190 degrees C) and pop a baking stone inside.
  • Scoop dough using a rounded tablespoon onto the preheated baking stone. Bake until cookies are lightly golden, approximately 11 minutes. Allow cookies to rest on the stone briefly before transferring to a wire rack to cool.
