White Chocolate-Cashew Butterscotch Blondies

Cashews add rich, buttery flavor and delightful crunch to these delectable bars.
Ingredients:
  • 1/2 cup butter or margarine, softened
  • 2 cups packed brown sugar
  • 3 eggs
  • 2 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 bars (4 oz each) white chocolate baking bars, coarsely chopped
  • 1 1/4 cups salted roasted cashew halves and pieces, chopped
Instructions:
  • Preheat oven to 350°F and generously spray a 13x9-inch pan with baking spray. In a large bowl, use an electric mixer to cream together butter and brown sugar until fluffy. Mix in eggs until airy. Gently incorporate flour, baking powder, and salt on low speed until combined.
  • Using a spoon, blend in white chocolate and 3/4 cup of cashews until thoroughly combined. Transfer mixture to pan and sprinkle the remaining 1/2 cup of cashews on top; gently press down.
  • Bake for 25 to 30 minutes until edges are dry, center is firm, and a toothpick inserted 2 inches from the edge comes out clean. Allow to cool completely for about 1 hour. Slice into bars by cutting into 8 rows by 4 rows.
