Whisk up dairy-free matcha pancakes with cashew milk, egg, olive oil, and white chocolate chips for a delicious, energizing breakfast.
Ingredients:
  • 1 cup all-purpose flour
  • 1 tablespoon green tea powder (matcha)
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 cup cashew milk
  • 1 tablespoon cashew milk
  • 1 egg
  • 2 tablespoons olive oil
  • 2 teaspoons vanilla extract
  • 0.25 cup white chocolate chips
Instructions:
  • In a large bowl, blend flour, matcha, baking powder, and salt with a whisk. Create a well in the center of the mixture and pour in 1 cup plus 1 tablespoon cashew milk, egg, olive oil, and vanilla. Whisk until only a few small flour clumps remain in the batter. Fold in chocolate chips and stir briefly.
  • Lightly grease a small saucepan and warm it over medium-low heat. Spoon 2 to 3 dollops of batter into the center of the pan, then use the back of the spoon to spread it out. Cook until small bubbles form and pop on the surface, approximately 1 minute. Flip the pancake and cook until the edges turn golden brown, around 1 minute. Repeat this process with the rest of the batter.
