Simple and decadent matcha green tea ice cream with vibrant color and a hint of sweetness.
Ingredients:
  • 1 tablespoon matcha green tea powder, or more to taste
  • 1 cup whole milk
  • 2 cups heavy whipping cream
  • 0.75 cup white sugar
Instructions:
  • Whisk matcha powder in a bowl until smooth. Add a splash of milk and whisk vigorously until matcha is completely dissolved. Gradually whisk in the rest of the milk.
  • Pour the matcha mixture into a pot and combine with cream. Cook over medium-low heat, stirring occasionally, until warmed through, for about 5 minutes.
  • In a bowl, vigorously whisk together sugar and eggs. Gradually pour 1/2 cup of hot matcha mixture into the egg mixture, whisking briskly until fully blended. Repeat this step with the remaining matcha mixture. Return the combined mixture back into the pot.
  • Heat the matcha mixture over medium-low heat, stirring constantly until warmed through, which should take around 3 minutes. Take it off the heat and let it cool to room temperature for about 20 minutes. Chill in the refrigerator for at least 4 hours before serving.
  • Chill the matcha mixture, then pour it into an ice cream maker to freeze for around 20 minutes following the manufacturer's guidelines. Once done, transfer the mixture to a sealed container and freeze until firm, approximately 4 hours.
