Vibrant green tea cake made with matcha powder: soft, moist, and deliciously colorful.
Ingredients:
  • 2 egg whites
  • 0.75 cup egg whites
  • 0.75 cup white sugar
  • 1 tablespoon honey
  • 0.75 cup organic all-purpose flour
  • 1 teaspoon baking powder
  • 1.5 tablespoons matcha green tea powder
  • 0.33333334326744 cup butter, softened
  • 0.25 cup buttermilk
Instructions:
  • Preheat your oven to 350°F (175°C) and generously grease a 9-inch baking dish.
  • In a large bowl, combine eggs, 2 egg whites, and 3/4 cup egg whites. Use an electric mixer to beat until thick and doubled in volume. Add ingredients one by one in this order: sugar, honey, flour, baking powder, matcha, vanilla extract, butter, and buttermilk, beating for 15 to 30 seconds after each addition. Pour the batter into the prepared baking dish.
  • Bake until a toothpick inserted in the center comes out clean, approximately 25-30 minutes in the preheated oven.
