Enhance sweet bread with healthy, flavorful matcha powder for a vibrant twist.
Ingredients:
  • 2 cups bread flour
  • 1 tablespoon superfine sugar
  • 2 teaspoons superfine sugar
  • 1 tablespoon green tea powder (matcha)
  • 1 teaspoon instant yeast
  • 0.75 teaspoon salt
  • 0.5 cup milk
  • 2 tablespoons milk
  • 1 large egg, lightly beaten
  • 1 tablespoon unsalted butter
  • 2 teaspoons unsalted butter
Instructions:
  • In a mixing bowl, combine flour, 1 tablespoon plus 2 teaspoons of sugar, green tea powder, yeast, and salt. Make a well in the center and add 1/2 cup plus 2 tablespoons milk and a beaten egg. Mix by hand until a soft dough forms.
  • Transfer dough onto a lightly floured surface and knead for 5 minutes until smooth and not sticky. Incorporate 1 tablespoon plus 2 teaspoons butter into the dough by kneading and mixing.
  • Knead the dough until smooth and elastic, not sticking to the work surface, for about 15 minutes. Shape the dough into a ball and place it in a mixing bowl. Cover with plastic wrap and allow it to rise until doubled in size, approximately 1 hour.
  • Grease a loaf pan lightly. Take the dough out of the bowl and press out any air pockets. Transfer the dough to a floured surface and use a rolling pin to shape it into a large rectangle slightly wider than the length of the pan and as long as possible. Roll the dough tightly, like a Swiss roll, and seal the seam firmly. Put the dough in the pan with the seam facing down, cover it with plastic wrap, and let it rise until it fills 80% of the pan, for about 45 to 60 minutes.
  • Heat your oven to 375 degrees F (190 degrees C).
  • Bake until beautifully golden brown, about 30-35 minutes in the preheated oven.
  • Allow the bread to cool in the pan for 30 minutes, then transfer to a cooling rack to cool completely before slicing.
