Coconut surprises tucked in between layers of decadent dark chocolate make this slice a chocoholic's dream.
Ingredients:
  • Melted butter, to grease
  • 80g dark cooking chocolate, coarsely chopped
  • 80g butter, at room temperature, chopped
  • 70g (1/3 cup) caster sugar
  • 20.00 gm cocoa powder
  • 1 x 225g pkt shredded coconut
  • 1 x 395g can sweetened condensed milk
  • 2 eggs, lightly whisked
  • 100g butter, chopped
  • 300g dark cooking chocolate, coarsely chopped
Instructions:
  • Preheat the oven to 180°C. Grease a 16 x 26cm slab pan with melted butter, then line with non-stick baking paper on the base and sides.
  • Set up a double boiler by placing the chocolate in a heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir with a metal spoon until the chocolate is melted and smooth.
  • Beat butter and sugar in a bowl until pale and creamy using an electric beater. Mix in chocolate and egg until well combined. Sift flour and cocoa over the mixture, then stir until well combined.
  • Spread the mixture evenly on the pan and bake for 15 minutes, or until set when touched.
  • Mix shredded coconut, condensed milk, and egg in a bowl. Evenly spread over the chocolate base. Bake for 25 minutes or until lightly golden. Allow to cool completely before proceeding.
  • Create a luscious chocolate topping by gently melting butter in a small saucepan over medium heat. Lower the heat and mix in chocolate until smooth. Pour this decadent mixture over the coconut filling, allow it to set in the fridge for 20 minutes, then cut into 12 irresistible pieces.
