Indulge in each luscious bite of coconut and cherries nestled beneath a rich milk chocolate topping.
Ingredients:
  • 100g butter
  • 110g caster sugar
  • 4.40 gm vanilla essence or extract
  • 1 egg
  • 150g plain flour
  • 395g can skim sweetened condensed milk
  • 50g butter
  • 225g desiccated coconut
  • Finely grated rind of 1 lemon
  • 100g glace cherries, chopped
  • 150g milk chocolate, melted
Instructions:
  • - Preheat your oven to 180°C. - Grease a 29.5 x 19cm lamington tin and line the base and two sides with baking paper. - Use electric beaters to whip together the butter and sugar until light and creamy. - Mix in the vanilla and egg until well combined.
  • Blend the flour into the mixture with a sturdy metal spoon until it's smooth. Transfer the mixture into the prepared tin and gently even out the surface.
  • In a heatproof bowl, microwave condensed milk and butter until butter melts, about 2 minutes. Stir in coconut, lemon rind, and cherries until well combined. Spread mixture over base, then bake until lightly browned, 30-35 minutes. Cool completely before serving.
  • Fill a paper icing bag with chocolate, seal the top, and cut off the tip. Generously drizzle the chocolate back and forth across the slice. Let it set until firm, then unmold from the tin and cut into squares.
