Elevate the classic bake-sale treat with upgraded and unique slices!
Ingredients:
  • 250.00 ml plain flour
  • 75.00 gm self-raising flour
  • 40.00 gm cocoa powder
  • 141.90 gm caster sugar
  • 85.00 gm desiccated coconut
  • 100g red glace cherries, chopped
  • 200g butter, melted
  • Desiccated coconut, to serve
  • 225.00 gm icing sugar mixture
  • 50g butter, softened
  • 40.00 gm boiling water
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease a 3cm-deep, 16cm x 26cm slice pan and line it with baking paper, leaving a 2cm overhang on the long ends.
  • First, sift the flours and cocoa into a sizeable bowl. Next, add in the sugar, coconut, and cherries, and stir everything together. Create a well in the middle of the mixture and pour in the butter and vanilla. Mix well to combine. Press the mixture into the prepared pan and bake for 20 to 25 minutes until a skewer inserted in the center comes out clean. Let it cool completely in the pan.
  • Prepare the chocolate icing by sifting icing sugar and cocoa into a bowl. Stir in butter and boiling water until the mixture is smooth. Spread the icing over the cooled slice, sprinkle with coconut, and let it set. Cut into pieces and enjoy.
