Elevate your chocolate bar to a heavenly cherry ripe slice for the perfect afternoon treat.
Ingredients:
  • Pink liquid food colouring
  • 150g plain flour
  • 55g caster sugar
  • 25g cocoa powder
  • 125g butter, melted
  • 200g pkt glace cherries, finely chopped
  • 397g can sweetened condensed milk
  • 240g desiccated coconut
  • 200g dark chocolate, chopped
  • 20g copha
Instructions:
  • Preheat your oven to 180C. Line a 16cm x 26cm slice pan with baking paper, leaving extra paper hanging over the sides.
  • In a medium bowl, mix together the flour, sugar, and cocoa powder. Add the butter and mix well. Spread the mixture evenly into the lined pan and press it down. Bake for 10 minutes or until firm to the touch.
  • In a bowl, mix together cherries, condensed milk, and coconut. Add 1-2 drops of pink food coloring and stir well. Pour the mixture over the slice base and use a spoon to smooth the surface. Bake for 20-25 minutes until firm. Allow it to cool for 30 minutes before serving.
  • In a heatproof bowl set over a saucepan of simmering water (ensuring the bowl doesn't touch the water), combine the chocolate and copha. Stir continuously with a metal spoon for 5 minutes until the chocolate is fully melted and the mixture is smooth. Pour the mixture over the coconut mixture, smooth the surface, and let it set for 30 minutes. Cut into pieces and enjoy!
