Easy Cherry Ripe slice

Create a delicious and unique dish from the member recipe collection. Note: recipe not tested by taste.com.au team.
Ingredients:
  • 1 packet Marie biscuits, crushed
  • 1 packet glace cherries
  • 113g (4 oz) copha
  • 1 can sweetened condensed milk
  • 15.60 gm shredded coconut
  • 200g milk chocolate
Instructions:
  • Prepare the tin by lining it with waxed paper, making sure to overlap the edges for easy removal of the cherry ripe slice before cutting.
  • Blend the biscuits in a blender until they resemble breadcrumbs.
  • Finely dice the glace cherries.
  • Melt 84g of copha until smooth and remove from heat.
  • Combine crushed biscuits, sweetened condensed milk, chopped cherries, and coconut in a bowl. Stir in semi-cooled copha and mix thoroughly. Press the mixture firmly into the tin and set aside.
  • Melt chocolate and copha in a double saucepan over low heat, stirring constantly.
  • Pour the smoothly melted mixture over the cherry ripe slice, ensuring an even spread.
  • Refrigerate until the chocolate is firm.
  • Using the edges of the waxed paper, lift the cherry ripe slice out of the pan and onto a cutting board once firm.
  • Cut the cherry ripe slice into desired shape – squares or triangles.
