Try this delightful homemade twist on the classic cherry ripe candy by taste member 'laurenbrooke'.
Ingredients:
  • 16 milk coffee biscuits
  • 100g glace cherries, chopped
  • 250g desiccated coconut
  • 395g sweetened can condensed milk
  • 4.40 gm vanilla essence
  • 125g copha, melted
  • 1/2 tsp pink food colouring
  • 200g Baking Dark Chocolate, melted
Instructions:
  • Prepare the slice pan by greasing and lining it with paper, extending 2cm above the sides. Arrange biscuits on the base, trimming as needed.
  • Combine condensed milk, essence, copha, and food coloring in a large mixing bowl. Mix thoroughly. Stir in cherries and coconut. Adjust color with a few more drops of food coloring to achieve desired hue.
  • Spread the mixture evenly over the biscuits and smooth out the top for a perfectly level base.
  • Drizzle the chocolate over the slice and let it sit for 1 hour to firm up. Cut into pieces and serve.
