Transformed classic childhood treat into guilt-free slice for all to savor.
Ingredients:
  • 140.00 gm buckwheat flour
  • 59.40 gm brown sugar
  • 446.25 gm desiccated coconut
  • 138.60 gm coconut oil, melted
  • 125.00 ml frozen cherries, thawed
  • 320g can sweetened condensed coconut milk (see notes)
  • 200g packet red glacé cherries, thinly sliced
  • 200g dairy-free dark chocolate, chopped (see notes)
  • 16.80 gm coconut oil
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Grease an 18cm x 28cm slice pan and line the base and sides with baking paper, leaving a 2cm overhang.
  • Combine buckwheat flour, brown sugar, desiccated coconut, and half of the coconut oil in a bowl, stirring until fully mixed. Press the coconut mixture evenly onto the base of the pan. Bake for 20 minutes, then let it cool.
  • Puree the thawed cherries in a small food processor until smooth. In a large bowl, combine the desiccated coconut, condensed coconut milk, glacé cherries, cherry puree, and remaining coconut oil. Mix until well combined. Spread the cherry mixture evenly over the base in the pan, pressing firmly to compact. Refrigerate for 1 hour before serving.
  • Prepare Topping- Combine chocolate and coconut oil in a microwave-safe bowl. Microwave on HIGH for 1 minute, stirring halfway until smooth. Quickly spread the chocolate mixture over the cherries, covering the edges. Let it set at room temperature for an hour before cutting into bars and serving.
