Indulge in a delicious gluten-free and dairy-free asparagus casserole for a satisfying meal without the guilt.
Ingredients:
  • 2 pounds fresh asparagus, trimmed
  • 0.66666668653488 cup gluten-free bread crumbs
  • 2 tablespoons nutritional yeast
  • 1 cup raw cashews
  • 1 cup chicken broth
  • 0.25 cup nutritional yeast
  • 0.75 teaspoon garlic powder
  • 0.125 teaspoon ground nutmeg
  • 1 egg white
  • 2 tablespoons bacon bits
  • 2 tablespoons sliced almonds
  • 2 teaspoons dairy-free margarine, melted
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), and grease a 7 x 11-inch baking dish with cooking spray.
  • Place a steamer insert in a saucepan and fill with water just below the bottom of the steamer. Bring to a boil, then add asparagus. Cover and steam for about 5 minutes until fork-tender. Drain before serving.
  • In a bowl, mix the bread crumbs and 2 tablespoons of nutritional yeast. Spread half of the mixture over the bottom of the baking dish. Add asparagus spears on top and lightly season with salt. Set aside the remaining bread crumbs for the topping.
  • In a small food processor or blender, blend raw cashews, chicken broth, 1/4 cup nutritional yeast, garlic, nutmeg, salt, and pepper until smooth, about 3 minutes. Then add egg white and blend for an additional minute on medium-high speed.
  • Evenly coat the asparagus spears with the blended mixture, then layer on the bacon, sliced almonds, and reserved bread crumbs. Finish by drizzling the melted margarine over the top.
  • Place the dish in the oven on the center rack and bake until the top is lightly browned and the casserole has set, approximately 30 minutes.
