Simple green side salad

Vibrant green salad bursting with delightful and intricate flavors.
Ingredients:
  • ½ a bulb of fennel
  • 1 handful of rocket
  • 1 handful of dandelion leaves
  • 1 handful of watercress
  • 1 handful of baby chard
  • 4 spears of asparagus
  • 1 handful of fresh chervil or parsley leaves
  • 1 lemon oil or Creamy French dressing
Instructions:
  • Prepare the fennel by trimming the bulb, keeping the tops, and slicing it thinly. Wash and dry the rocket, dandelion, watercress, and baby chard leaves. Remove the woody ends from the asparagus by snapping them off; discard the ends. Hold the asparagus and use a speed peeler to slice each spear into thin slivers. Combine the asparagus shavings, sliced fennel, fennel tops, salad leaves, and herbs in a bowl. Add your preferred dressing, like Creamy French dressing, and toss well to coat everything evenly. Enjoy this fancy, yet simple salad!
