Elevate any simple salad with fresh leaves and a well-balanced dressing to boost flavor and nutrient absorption. Brillant!
Ingredients:
  • 1 soft round lettuce
  • 1 little gem lettuce
  • 1 small radicchio (or an extra little gem)
  • a few sprigs of soft mixed fresh herbs, such as basil, flat-leaf parsley, mint
  • 1 lemon
  • 6 tablespoons extra virgin olive oil
Instructions:
  • For the dressing, squeeze the juice of half a lemon into a jar, catching any pips with your fingers. Add oil, sea salt, and black pepper. Secure lid and shake well. Adjust taste with more lemon juice or oil if needed. Remove roots from lettuces, wash and spin dry. Place leaves in a bowl, add herbs. Drizzle 3 tablespoons of dressing and gently toss. Adjust seasoning if needed. Save leftover dressing in the fridge. Serve immediately.
