Green bean salad with caper salsa

Zesty caper salsa elevates crunchy green beans to perfection.
Ingredients:
  • 1kg green beans, trimmed
  • 115.00 gm walnuts
  • 113.75 gm olive oil
  • 2 lemons, juiced
  • 125.00 ml baby capers, drained, rinsed
  • 250.00 ml flat-leaf parsley leaves, roughly chopped
  • 1 small red onion, finely diced
  • 4.50 gm white sugar
Instructions:
  • Bring a large pot of salted water to a boil. Cook beans for 5 to 6 minutes until just tender. Drain, cool in cold water, pat dry, then refrigerate on a plate until needed.
  • Preheat your oven to 180°C. Spread walnuts on a baking tray and roast until golden and crisp, about 5 minutes. Transfer the roasted walnuts to a cutting board and let them cool for 5 minutes before roughly chopping. Enjoy!
  • In a jug, vigorously mix together oil and 1/3 cup of lemon juice. Stir in walnuts, capers, parsley, onion, and sugar. Season generously with salt and pepper. Drizzle the caper salsa over the beans and enjoy.
