Summer green bean salad with dried cranberries, feta, and toasted walnuts - a delightful dish for any gathering.
Ingredients:
  • 0.5 cup chopped walnuts
  • 1 pound French green beans, cut into 1 1/2-inch pieces
  • 0.5 cup crumbled feta cheese
  • 0.5 cup thinly sliced red onion
  • 0.33333334326744 cup dried cranberries
  • salt and freshly ground black pepper to taste
  • 0.5 cup balsamic vinaigrette salad dressing
Instructions:
  • Heat the oven to 350°F (175°C) and spread walnuts on a baking sheet.
  • Bake in a preheated oven for 5 to 7 minutes until toasted. Allow to cool for about 10 minutes before serving.
  • Once the walnuts have cooled, boil a large pot of water. Cook the green beans for 5 to 7 minutes. Drain, rinse with cold water, then drain again.
  • Combine green beans and walnuts in a mixing bowl. Mix in feta, red onion, cranberries, salt, and pepper, tossing gently. Drizzle with balsamic dressing before serving.
