Green bean and feta salad with dill

Impress your friends with this show-stopping salad at your next party.
Ingredients:
  • 20.00 ml white balsamic vinegar
  • 20.00 ml chopped fresh dill
  • Pinch of caster sugar
  • 1 lemon
  • 400g green round beans, topped
  • 75g (1/2 cup) feta, crumbled
Instructions:
  • Combine oil, vinegar, dill, and sugar in a screw-top jar. Shake well. Season with salt and pepper to taste.
  • Zest the lemon using a zester or vegetable peeler, making sure to remove only the colored part of the rind, then cut it into thin strips after removing the white pith.
  • In a large saucepan of lightly salted boiling water, simmer the beans and lemon rind for 2 minutes until the beans are vibrant green and al dente. Shock in cold water and drain.
  • Spoon the bean mixture onto a serving plate, pour the dressing over it, and sprinkle with feta before serving.
