Delicious Greek tomato and green bean salad with feta, parsley, and white balsamic dressing.
Ingredients:
  • 1 pound fresh green beans, trimmed
  • 0.25 cup olive oil
  • 2 tablespoons white balsamic vinegar
  • salt and freshly ground black pepper to taste
  • 0.25 cup chopped fresh parsley
  • 1 medium shallot, minced
  • 1 clove garlic, minced
  • 3 medium tomatoes, chopped
  • 2 ounces crumbled feta cheese
Instructions:
  • 1. Bring a pot of lightly salted water to a boil. Cook beans until soft, 10 to 15 minutes, then drain well.
  • In a small bowl, combine oil, vinegar, salt, and pepper, whisking until well blended. Gently fold in parsley, shallot, and garlic.
  • In a large bowl, gently mix together the beans and tomatoes. Drizzle the dressing on top and gently toss to coat. Fold in the feta. Let it marinate for 20 minutes before serving.
